Just a reminder to all ramen fans! Pork bone broth is "TONKOTSU", NOT "TONKATSU". TonkAtsu is breaded deep fried port cutlet, not pork bone broth!!
Hint: If a server says Tonkatsu Ramen at a restaurant, don't expect authentic ramen. Ton = Pork🐷, kotsu = Bone🍖

Jika Seimen Ito - Akita, Japan

Jika Seimen Ito - Akita, Japan 自家製麺 伊藤 秋田県/角舘🇯🇵

Posting a ramen shop I've visited in Japan in the past.
This is the original Ito in Akita Prefecture in Japan.  There are several Ito ramen shops in Tokyo now and is Michelin rated.
Offering Shoyu ramen with niboshi (dried baby sardine) based broth.  They keep it very simple, with just shina soba and shina soba with chashu.

They have shops in Ginza, Akabane and Asakusa in Tokyo.  Worth a try if you are in Tokyo!

Noodle is home made, cooked firm.  I got the large portion and noodle portion was more than the soup.  The niboshi shoyu soup was excellent, I just couldn't stop stuffing my mouth with the firm noodles. Sometimes simple is best.

There are no signs and looks like a regular house with Japanese flags 🇯🇵. so a little hard to find.  Look for the flags if you are going.

Ticket machine, simple with small, medium and large for the 2 ramens they offer.

Chopsticks on the counter.  That's not a ghost in the background, that's my son hangry and waiting for ramen.
