Just a reminder to all ramen fans! Pork bone broth is "TONKOTSU", NOT "TONKATSU". TonkAtsu is breaded deep fried port cutlet, not pork bone broth!!
Hint: If a server says Tonkatsu Ramen at a restaurant, don't expect authentic ramen. Ton = Pork🐷, kotsu = Bone🍖

Niboshi Chuka Asari - Odate, Akita 🇯🇵 煮干中華あさり - 秋田県大館市

I am now visiting Odate in Akita Prefecture. In this Northeast (Tohoku) region, niboshi (dried baby sardines) broth is very popular. In NY/NJ area this broth is not common so I went to a locally popular shop, Asari.
 Niboshi Soba  煮干そば
 You can choose thick or thin noodles.  I chose thick.  
 Chuka Soba - Shoyu ramen without niboshi. 
中華そば - これは煮干なし。
From left, Chuka soba, Niboshi soba extra niboshi broth, Niboshi soba regular. It's not on the menu but you can order extra Niboshi flavor soup but quantity is limited. The one on top is the extra niboshi, you can see the color of soup is darker.
